Easy Gluten-Free Chicken Nuggets
I've tried all the gluten-free flours, or most of them, on chicken nuggets.
The bottom line is ewwwwww. They're just not the same.
But if I take 3/4 cup cornmeal plus 1/4 GF tortilla crumbs, and then add my seasonings, I get a very nice coating.
The seasonings I like are onion powder and paprika, maybe some garlic salt.
I also really like Pappy's brand seasoning. I'm pretty sure they are gluten-free, but haven't called the company yet.
I cut up my boneless, skinless chicken breasts. I dip them in egg, then roll them in the coating.
There are two different ways I cook them.
One is in a pan with some melted shortening and Nucoa brand margarine. I don't put in enough oil to completely cover. I flip them partway through.
The other way is in a 350 degree oven. I melt some Nucoa in the pan and flip them halfway through.
Either way is good and everyone likes them. Finally, I have a recipe for the whole family.
